as it is too hot for hot oatmeal and i am still too poor for cereal.  we bring you BREAKFAST MUFFINS

1.  preheat to 450

2.  soak 1 cup instant oats in 1 cup milk for 15 minutes (not really necessary as i’ve found out)

3.  mix one egg + 1/4 cup of veggie oil + splash of vanillia

3.  mix this with the oats

4.  add 1/4 cup of sugar (or more if you like sweet things) + 2 tsp baking powder + cinamon + pinch of salt

5.  add one cup of flour.

6.  mix and then spoon into cupcake liners or a greased pan (i was worried… but i had no trouble getting these guys out of my non stick pan with a touch of oil)

7.  cook until you can stick in a fork and it comes out clean.

Great for mornings when you work the 6:20 am shift at the gym.

variations encoraged.  Bannanas?  nuts?  brown sugar?  molassas?  raisins?  chocolate chips?

oo this sounds like ideal lab snacks for next year. are they at all dry? oaty/branny things scare me a little. i bet they would be amazing with bananas.

They’re rather moist. The oat flakes all but disappear and your left with a yummy cake like- muffin. Not crumbly at all. I’m wondering if i can make them fluffier. They would probably be amazing with slightly overripe mashed bananas. Also switching out white sugar for brown might be really good too.

I made them! But soon found out baking soda and baking powder are NOT the same. blast. But I could taste the potential! I plan to try again!

Baking powder is just baking soda with creme of tarter or something. I researched the difference the other day. Apparently baking powder just has acid for the soda to react with already mixed in. I’m glad you tried making the muffins.
